Over the years, it has changed and updated menus to keep the regulars excited.Last March 3, owner and executive chef Calogero Drago launched a new menu to continue its tradition of surprising and delighting the customers.“With fewer fruits and vegetables in season now than in warmer months, it is all about rich sauces, hearty meats and earthy mushrooms,” says Drago. “But that doesn’t mean everything should be heavy, as there are plenty of delicious lighter dishes using the same flavors.”Some of Celestino’s newest must-tries are the Papa al Pomodoro alla Toscana, a Tuscan-style bread and tomato soup that Drago describes as “thich, warm, and satisfying”; salads like Insalata Rustica, Insalata Cose Buone, and Insalata Frutti Di Mare; and luxurious antipasti selections like Carpaccio de Pesce Spade con Finocchio e Arance, Cappesante con Fagioli e Salvia, and Petto d’anatra Affumicato con Bietole.Hearty entrees abound as well, like the classic Lasagna alla Bolognese, the Buco alla Milanese served with saffron rice, and the Coniglio al Forno con Salsa di Olive Nere, roast rabbit dish with black olive sauce.And then there are the Risottos, which Drago calls the “ultimate winter dish.”“It’s just so creamy and comforting!”The new menu offers three different choices: Squid Ink, Beets and Goat Cheese, and with Aged Balsamic Vinegar and Rosemary.For desserts, Drago thinks you can never go wrong with their Cannoli, Flourless Chocolate Cake, or Panna Cotta.
